Gibsons Restaurant Group to open tavern-style restaurant in Fulton Market

Gibsons Restaurant Group is officially bringing its iconic Chicago hospitality to Fulton Market with a new restaurant slated to open next fall in one of the city’s most sought-after dining districts.

The new Gibsons concept will be located at 919 W. Fulton Street, at the corner of Fulton Market and Sangamon Street, within a large mixed-use development currently under construction. The restaurant will occupy roughly 15,000 square feet of ground-floor space in the 11-story building, positioning it prominently along Fulton Market’s bustling restaurant corridor.

While the restaurant’s final name and menu have not yet been announced, the concept has been described as a tavern-style or supper club-inspired venue, blending Gibsons’ signature service and classic American fare with a more relaxed, social atmosphere. The opening is expected in fall 2026, once construction on the building is complete.

The Fulton Market project has been years in the making for Gibsons Restaurant Group, which has long sought the right opportunity to enter the neighborhood. Known for landmark Chicago restaurants such as Gibsons Bar & Steakhouse, Gibsons Italia, Hugo’s Frog Bar & Fish House, LUXBAR, and Quartino Ristorante & Wine Bar, the group continues to expand its footprint while remaining deeply rooted in the city.
