Former Chicago Bears defensive end Israel (“Izzy”) Idonije and renowned chef Stephen Gillanders will unveil their new culinary gem, “Signature.” Located at 1312 S. Wabash, on Saturday, Jan. 20. Signature will be an experience where contemporary American cuisine meets the pulse of Chicago in a chic and stylish environment.
Signature aims to redefine the sports bar experience, offering guests a seamless blend of Chicago's sports culture with cuisine, beverage and atmosphere. With a commitment to excellence, the collaborative effort between Idonije and Gillanders aims to set a new standard for upscale entertainment and hospitality in the heart of the South Loop.
"At Signature, we're not just crafting a menu; we're fostering a sense of belonging and camaraderie. Our mission is to provide an unparalleled dining and sports entertainment atmosphere that reflects the vibrancy of Chicago," said Idonije. “Signature will be a destination for both game days and date nights.”
Chef Stephen Gillanders, the genius behind the restaurant group S.K.Y., has curated a menu that transcends typical bar fare. With a commitment to locally sourced ingredients and innovative techniques, Signature promises an appetizing journey. From game-day classics with a gourmet twist to sophisticated dishes reflecting the diverse flavors of Chicago, the offerings at Signature will pay tribute to the city's rich culinary heritage.
"We're excited to bring a fresh approach to contemporary American cuisine while incorporating the dynamic energy of a sports bar. It's about creating memorable moments for our guests, whether they're sports enthusiasts or food connoisseurs" said Gillanders. “Unlike a typical sports bar, Signature cocktails are driven by classic bartending, incorporating culinary techniques. An elaborate collection of both signature and classic cocktails, featuring well known and contemporary spirits, house made syrups and infusions showcase familiar flavors and styles in unfamiliar and eye-catching presentations. Draft beer is a thoughtful curation of Midwest local products, while cans and bottles are focused on global selection. For those who choose to enjoy wine, a concise wine list is available by the bottle.”
Signature is not only dedicated to delivering a top-tier experience but also to making a positive impact beyond its doors. Idonije and Gillanders are committed to elevating the entire ecosystem of minority restaurant owners. Drawing from their experience as entrepreneurs, they aim to be a support to existing restaurant owners and contribute to the vibrant culinary mosaic of Chicago. The restaurant is committed to sustainability and community engagement, and will actively contribute to local initiatives, aligning with Israel Idonije's long standing dedication to making a positive impact beyond the playing field.
"We believe in giving back to the community that has given us so much. Signature will be a hub for not only great food and sports but also a catalyst for positive change in Chicago," said Idonije.
