In late May 2025, Chicago welcomed The Alston, a new steakhouse occupying the third floor of One Chicago at 750 North State Street, bringing together the bold Midwestern heartiness of a traditional Chicago steakhouse with the elegance and flair of 1920s French nouvelle cuisine. Nestled in the Gold Coast neighborhood, The Alston marks Michelin-starred Chef Jenner Tomaska’s first partnership with the Fifty/50 Restaurant Group, uniting Tomaska’s fine‑dining pedigree with the energy and scale of one of the city’s most respected hospitality teams.

The dining room, designed with sweeping ceiling art and warm lighting, seats approximately 350 guests across the main dining salon, Champagne bar and a year‑round terrace with skyline views. It offers theatrical moments like tableside slicing of duck à la presse alongside open‑fire dry‑aged beef, butter‑steeped sauces and seafood towers crafted with northern prawn, oysters, scallops and king crab.

Guests can partake in a tasting of steaks aged in‑house and seared over wood‑fire, alongside French onion soup crowned with raclette‑melted brioche, lobster bisque with peach and basil, Mille‑Feuille brochettes of ribeye and an array of caviar options, small plates, and signature cocktails like the Josephine’s 75 or Chanel No. 5 in the fireside lounge.

Behind the bar, a 500‑plus bottle wine cellar serves as both a focal point and invitation for private events. Attentive sommeliers and chefs ensure that every element, from the sauce ladled on a filet to the wine pairing, is approached with precision and polish.
