The new restaurant, Toro Chicago in the Fairmont, is only three weeks old but it already has a buzz. In large part because of the impeccable reputation of its renowned Chef Richard Sandoval, but you can also factor in the beautiful, inviting ambiance as well.
We didn’t know what to expect from this new Latin American restaurant but with Chef Sandoval being known as a global pioneer in contemporary Latin cuisine, we knew it would be something special.

Fairmont General Manager Nick Orrico, with star server Fredy and Wayne Harth (founder Kaleidoscope Vue Consulting).
The menu included a table-side preparation of Churrasco (Colorado lamb chops, prime ribeye, Argentinian chorizo and chicken thighs), sweet corn empanadas (that can’t be missed), tuna ponzu guacamole, a 52 oz. tomahawk steak, lomo saltado (beef tenderloin, creamy rice, soy sauce, crispy potato and rocoto aioli) and so much more! A loaded seafood bar completes the delectable offerings.

It was a joy to see each dish served with such pride by attentive servers. Adding to that, the dining areas are filled with chic decor, warm colors and low lighting making it inviting to settle in for a cozy dinner with friends.

Chef Sandoval’s credits are long and impressive. He’s a graduate of the Culinary Institute of America, who has earned many accolades over the course of his career including Mexico's “National Toque d ’Oro,” Bon Appetit’s “Restauranteur of the Year,” Cordon d'Or’s “Restauranteur of the Year”, one of The Inc Magazine’s 10 Most Inspiring Business Leaders, a James Beard Semi-Finalist for “Outstanding Restaurateur” and an Honorary Doctorate recipient for the Culinary Arts from Johnson & Wales University.
