The Dearborn, a celebrated urban American tavern led by Amy and Clodagh Lawless, has appointed Executive Chef Aaron Cuschieri as Chef Partner for their new outpost at Chicago O’Hare International Airport’s Terminal 5. This move signifies an ambitious expansion for The Dearborn, blending Cuschieri's prior in-house expertise with high-traffic airport dynamics, as announced by the press release.

According to the announcement, Cuschieri—who is known for his recognition in Zagat’s “30 under 30” and Eater’s “Young Guns” list, as well as his appearances in Bravo’s “Top Chef” and Food Network’s “Beat Bobby Flay”—will transfer his culinary vision from The Dearborn’s Loop location to this new venue. He has been with The Dearborn since its inception in 2016 and previously led kitchens at notable establishments such as Alinea and Takashi.

"This opportunity at O’Hare is unlike anything we’ve done before," said Chef Partner & Executive Chef Aaron Cuschieri in the company’s press release. The new O’Hare location will offer diverse dining formats, including grab-and-go options, a pastry window, and full-service meals.
