After a comprehensive search, Chicago heavyweight player Gibsons Restaurant Group is set to open a new 15,000-square-foot eatery in the thriving Fulton Market District. Located west of downtown, the up-and-coming neighborhood has attracted interest from dozens of local restaurant groups in recent years.
According to Crain’s, Gibsons recently signed a ground floor lease at 919 West Fulton St., with real estate developer Fulton Street Cos. This new venture will be Gibsons Restaurant Group's 13th establishment in the Chicago area.
The upcoming restaurant will operate on the ground floor of a new 400,000-square-foot, 11-story office building. The innovative project will further contribute to the growing Fulton Market landscape. Gibsons' expansion in the city comes as numerous restaurants and businesses are flocking to the burgeoning district.
