Pizzeria Gabbo will open Thursday, Oct. 22, in Chicago’s Fulton Market, bringing two styles of pizza, Italian-inspired drinks, and a neighborhood bar to the growing restaurant district. The new restaurant from Lettuce Entertain You Restaurants is located at 834 W. Fulton Market St., Suite 200.

Created by Executive Partner and Divisional President Marc Jacobs and Chef Partner Andrew Ashmore, whose restaurant credits include Antico Posto, Beatrix and L. Woods Tap & Pine Lodge, the 60-seat restaurant will serve lunch and dinner, according to a press release. It will include an eight-seat bar, carryout and delivery planned for a later date.

Two styles of Chicago pizza

The menu will focus on Chicago Thin & Crispy pizza and New York Crispy pizza, the kitchen’s crunchier take on a traditional New York-style pie. More than 10 pizzas will be offered, including Chicago-style Fennel Sausage & Giardiniera, Chicago Supreme, New York-style Tomato Pie, and Golden Potato, Lemon & Rosemary.

According to the announcement, the dough will use premium organic flour and a long fermentation process. The New York-style dough combines three flours and rests for about 48 hours before baking. A gluten-free crust will also be available.

“We’re thrilled for Pizzeria Gabbo to be a new meeting spot for the neighborhood,” Jacobs said in the press release. “Pizza holds a special place in Chicago’s history, and we’re excited to share our take on both Chicago and New York-style.”

Beyond pizza, diners will find antipasti, salads, and housemade pasta. Offerings include Pepperoni Chips with marinara, Butternut Squash Croccanti with Calabrian chili aioli and giardiniera, A Light Lemon Fettuccine Alfredo, and Slow-Cooked Chicken Bolognese Rigatoni.

Italian drinks and gelato

Desserts will include housemade soft-serve gelato in Roasted Pistachio and Milk Chocolate. Guests can order a swirl or Gabbo-Style Sundae topped with candied orange honey and pistachio praline. A street-facing gelato window is planned for a future opening.

Senior Sommelier John C. Slatter designed a list with more than 20 Italian and domestic wines by the glass, emphasizing family-owned, sustainable producers and the Campania region. The beer menu will include Italian lagers and bocks, along with craft selections from Chicago and Cincinnati.

The bar, led by Senior Beverage Manager Nicholas Berggren, will offer spritzes, classic cocktails, Italian-inspired drinks, and zero-proof options. Hours will be 11 a.m. to 4 p.m. daily for lunch, followed by dinner from 4 to 10 p.m. Sunday through Thursday and 4 to 11 p.m. Friday and Saturday.
