Celebrated Chicago chef Fabio Viviani, known for local favorites like Siena Tavern, Bar Siena, JARS, Prime & Provisions,, has announced his latest restaurant called Seville. Set to open later this month, Seville will bring a rustically refined Mediterranean restaurant and bar experience to the Loop.
According to the chef himself, Seville will emphasize seasonal inspirations while showcasing his signature dishes.
At the heart of Viviani’s Mediterranean dining experience is a rich focus on seafood. Currently the full menu has not yet been released to the public. But patrons of Seville can expect an ambitious approach to the region’s cuisine, with offerings such as succulent grilled octopus and other shareables plus an array of sea-to-table entrees that will satisfy any seafood lover's craving.
Seville is set to open atop the roof of the Canopy by Hilton Chicago at 243 S. Franklin, in the heart of the Loop. Restaurant enthusiasts can also join Seville’s VIP Grand Opening guest list for a spot at the exclusive opening.
The Loop has recently witnessed a surge in new dining experiences, and Seville's forthcoming arrival will surely cement downtown Chicago’s reputation as a must-visit destination for food enthusiasts.
