Chicago coffee lovers rejoice: after building a cult following through pop-ups and residencies, Milwaukee-based Discourse Coffee is set to open its first permanent Chicago location in the Fulton Market neighborhood.

Discourse has made a name for itself with an original approach to coffee, using unexpected flavor pairings and culinary techniques to deliver a one-of-a-kind beverage experience. According to FSR magazine, Discourse Coffee has spent the past two years testing the Chicago market through a series of collaborations, most notably a residency in the Wicker Park neighborhood. That residency, hosted at Urbanbelly, introduced Chicagoans to the brand’s unconventional menu, including drinks like the viral “ramen latte” among other hybrid concoctions. 

Per the company's website, Discourse was founded in Wisconsin and began as a small, community-driven concept focused on pushing the boundaries of beverage. Its founder, Ryan Castelaz, describes the brand’s philosophy as “translating stories into liquid form,” often using techniques more common in fine dining or cocktail programs than traditional cafés.

 That has translated into a menu that prioritizes creativity over convention. Some of its signature drinks incorporate ingredients like olive oil, herbs, and spice blends, ensuring a fun and unique experience.

The new storefront will be located at 952 W. Fulton St., bringing an exciting new addition to the heart of Fulton Market's celebrated dining and bar scene.

The arrival of Discourse showcases the growing appetite for both high-quality caffeine and the need for creative experimentation in order to flourish in Chicago’s already dense Coffee environment.

The company's website notes that the Chicago store features both Discourse’s core menu items and rotating seasonal offerings. Popular favorites included drinks like the “Channel Orange,” mixing espresso with smoked citrus, and the savory “Motorhead,” which incorporates pork fat and caramel.

The company says it places emphasis on narrative-driven beverages, where each drink is designed around a story or concept, an approach that has helped distinguish itself in the coffee industry.

In addition to beverages, the space is expected to function as a community hub, reflecting the brand’s origins as a gathering place centered around music, art, and conversation. A curated menu of handmade pastries will also be available at the new location.
