Adalina Prime, the latest venture from Gold Coast’s acclaimed Adalina, is gearing up to open this summer in Chicago’s bustling Fulton Market. Known for blending tradition with innovation, the new restaurant unveils a high-caliber culinary team and a menu guaranteed to surprise diners with global influences and local charm.

The chefs behind the vision

Leading the charge as Chef/Partner is Executive Chef Soo Ahn, a former contender on ‘Top Chef’ and Michelin star recipient at Band of Bohemia, according to the announcement. Joining him as the new restaurant’s executive chef is Nemanja Milunović, who brings experience from world-renowned kitchens such as three-Michelin-starred Alinea in Chicago and Manresa in California. Born in Belgrade, Serbia, Milunović’s approach combines his Balkan roots with refined culinary techniques.

Chef de Cuisine Andy Lownes, a veteran of Gibsons Italia and Chicago Cut Steakhouse, brings his steakhouse expertise, while Pastry Chef Amy Arnold adds innovation on the dessert front. As stated in the press release, their collective vision aims to create a vibrant menu that pushes the boundaries of a traditional steakhouse experience.

Innovative dining experience

Expect familiar prime cuts and fresh seafood, but it’s the unexpected dishes that shine, the announcement boasts. Highlights include Korean cheesy corn with lobster, cacio e pepe spinach, and a seafood tower adorned with tteokbokki—rice cakes topped with a spicy diavolo sauce—inspired by Chef Ahn’s favorite street food. Premium beef selections hail from global origins, including boutique Australian Wagyu and revered Japanese prefectures.

Adalina Prime strikes a balance between meat-centric and plant-based options; vegetarian and vegan dishes feature items like charred Lion’s Mane mushroom steak, crafted from Chef Nemanja’s preference for plant-based dining, the press release states. Creative side dishes and playful nods to chain favorites add fun to the tantalizing lineup.

Slated to open in late summer 2025, Adalina Prime promises diners a culinary journey like no other, redefining the steakhouse genre with each dish.
